West 7th Street runs south-west out of downtown Saint Paul past the arena and the old brewery district, and its bar scene has historically been an honest one of neighbourhood taverns rather than cocktail rooms. Emerald Lounge opened into that stretch as a small, dark, intimate cocktail and wine bar with a seasonal food menu, and it is one of the few places on the corridor doing precise drink work. It runs evenings only, Tuesday through Saturday, closed Sunday and Monday, which keeps the room small and the bar attentive.
What earns it a place here is that the non-alcoholic drinks are given their own named menu section — the bar calls it a temperance menu, borrowing the nineteenth-century term — rather than being handled as an off-list request. That section carries non-alcoholic beer and wine by the bottle and glass alongside house-built zero-proof cocktails. The Crimson Breezeberry Shrub is built on raspberry and ginger with champagne vinegar and soda: the vinegar is the working part, supplying the acid bite that would otherwise have to come from a spirit and keeping the drink from collapsing into fruit syrup. The Captain Jack Sparrow uses milk-washed pineapple with coconut syrup, lime acid and mint — milk-washing being the clarification technique that strips harshness and leaves a silky texture, and one that takes real bar time to execute. Both are the kind of build that signals a bar treating the zero-proof column as a craft problem rather than a compliance exercise. The bar is licensed and its full-strength cocktail and wine list remains the main programme, so this is not an alcohol-free venue; the temperance menu sits beside it. Note that the drink names above come from the city's visitor bureau rather than from a dated menu, so seasonal rotation is possible — worth confirming at the bar.
