Kava Republic

Kava Republic sits at 301 Keawe Street in downtown Hilo and is the town's fully alcohol-free room. The kava is fresh and locally grown — on an island where ʻawa is a native crop with a long cultural history, and which the state formally recognised as a safe traditional food in 2025, that is a shorter supply chain than almost any mainland kava bar can claim. Around the traditional preparation sit blended drinks the bar calls kavatails, plus coffee and a shave-ice menu, and there is wifi and enough space to actually sit and work.

The opening hours are the quietly remarkable part. Nine in the morning to nine at night Sunday through Wednesday, and to ten Thursday through Saturday. Almost every alcohol-free venue in this directory is one thing or the other — a café that shuts at five, or a bar that opens at five — and the gap between them is exactly the stretch of the day that is hardest to fill if you are not drinking and not working. Kava Republic covers the whole span from the same counter, which means it functions as a morning coffee stop, an afternoon desk, and an evening out without you having to change venues or explain yourself.

The programming leans social rather than wellness. Open mic runs on Thursday evenings, live music at weekends, and there are weekly events besides; the room's own description of itself is chill and social, with plenty of space to hang, and the reviews bear that out. For Hilo — a working town rather than a resort one, where the visitor-facing nightlife is thin and the local nightlife is mostly restaurants and brewpubs — it is the obvious answer to the question of where to go in the evening if the answer cannot be a bar.

The honest caveat, as everywhere kava is served. It contains no alcohol but it is psychoactive: mildly sedating, slow to come on, not to be combined with alcohol or with sedating medication, and worth planning your drive home around. The coffee and the shave ice are separate from the ʻawa if you are avoiding intoxicants entirely, and staff are used to being asked which is which.
