Pharm Table

Pharm Table sits on South Presa Street in Southtown and works from an unusual premise: chef Elizabeth Johnson built the menu around anti-inflammatory cooking drawn from Ayurvedic principles, treating food primarily as something that acts on the body. That framing changes what the bar is for.

In most restaurants the alcohol-free drink is a concession — something offered to the guest who cannot participate. Here it is continuous with the whole proposition. Somebody eating a menu designed around how they will feel tomorrow is not making a different kind of choice by skipping the wine, and the room reflects that. For anyone tired of the small performance that ordering a mocktail in a bar involves, the absence of that dynamic is worth more than the drink itself.

The drinks are properly built. The N/A-groni is the one to order, because a Negroni is defined entirely by bitterness and is therefore the hardest classic to render without alcohol — most attempts substitute something red and sweet and miss the point completely. Pharm Table also pours a zero-proof margarita lengthened with aloe, which adds body and a slightly vegetal cool that suits the food, and the Golden Hour.

The schedule takes planning: closed Monday and Tuesday, dinner only Wednesday and Thursday from 5pm, opening at noon on Friday and at 10am on Saturday and Sunday for weekend brunch. That weekend daytime service is genuinely useful — Southtown is one of San Antonio's better walking neighbourhoods and there is very little else in the city offering a considered alcohol-free drink at eleven in the morning. Mixtli is a couple of doors along the same block. Southtown as a whole is the most rewarding neighbourhood in the city to walk without drinking, with Pharm Table and Mixtli anchoring one end of it.
