Skof opened in May 2024 in the Grade II-listed Federation building in NOMA, the regeneration quarter at the northern edge of Manchester's city centre. It is the first solo restaurant from chef Tom Barnes, a Roux Scholar and long-time Simon Rogan lieutenant who was executive head chef at two-Michelin-starred L'Enclume in the Lake District. The 36-cover room earned a Michelin star in February 2025 and was named Best New Restaurant at the Good Food Guide Awards and Newcomer of the Year at the Manchester Food and Drink Awards, cementing it as one of the city's most acclaimed openings.

What makes Skof notable for alcohol-free guests is that the tasting menu can be matched with a fully non-alcoholic pairing rather than a wine flight. Priced at around £40, the botanical-driven pairing puts the kitchen's extensive collection of house-made juices centre stage, with combinations such as celeriac and lemon thyme singled out as highlights. Barnes has been candid that a full wine pairing is not for everyone, and the no-alcohol option is designed as a considered, course-by-course alternative - not a single token mocktail. The wider drinks list, developed with Zoe Burgess of London consultancy Atelier Pip, also leans on lower-alcohol builds, sour beers and fermented juices, and the team collaborated with Manchester's Track Brewing on 'Sidney', a light low/no citrus-toned lager intended to open the meal.

The setting is a former Edwardian drapery warehouse with high ceilings, exposed brick and steel beams, giving fine dining an unpretentious, distinctly Mancunian ease. Service runs lunch Thursday to Saturday and dinner Wednesday to Saturday; booking well ahead is essential given the small room and its profile.
