The Interval is the cafe, bar, and salon of The Long Now Foundation at Fort Mason Center, a futurist space built around long-term thinking, with a floor-to-ceiling library, an eight-foot orrery, and artwork by Brian Eno. Its bar program was created by acclaimed bartender Jennifer Colliau, founder of Small Hand Foods, whose menu is organized into themed sections including a dedicated "Temperate & Teetotaling" run of low- and no-ABV drinks made with the same house-made syrups and fresh ingredients as the alcoholic cocktails. Punch profiled it as "A San Francisco Bar Meant to Last 10,000 Years."
