Untitled Art was launched in December 2016 by Isaac Showaki, founder of Octopi Brewing in Waunakee, Wisconsin, together with Levi Funk of Funk Factory Geuzeria. It began as a vehicle for collaborations and experimental releases — heavily fruited sours and seltzers, high-concept pastry stouts — and has become one of the largest and most widely distributed non-alcoholic beer ranges in the United States.

The production method is what separates it. The beer is brewed and fermented completely, in the ordinary way, and the ethanol is only removed afterwards using reverse osmosis membrane filtration — a cold physical separation that leaves the hop oils, malt sugars and fermentation-derived esters developed during brewing largely intact. The cheaper routes to a non-alcoholic beer, arresting fermentation before alcohol forms or boiling the alcohol off, produce something closer to sweet wort or to cooked beer respectively, which is the reason so much of the category tastes thin or bready.

That technical choice is why Untitled Art can attempt styles other non-alcoholic producers do not. Rather than stopping at a lager and a pale ale, the range runs to west coast and hazy IPAs with real resinous bitterness, dark chocolate peanut butter stouts, Italian pilsners and intensely fruited Florida Weisse-style sours. The beers are brewed at Octopi in Waunakee, fifteen minutes north of Madison, whose taproom pours the line on site.

Bar None is a zero-proof evening bar in Chicago's West Loop, running Friday to Sunday from 5pm to 11pm inside Froth, the coffee cafe in the lobby of The Duncan at 1515 W Monroe St. It launched on 28 February 2026 from Heritage Hospitality Group, the team behind Froth, with beverage director Luke Nevin-Gattle (previously Bunker and Larry's). Every cocktail is genuinely alcohol-free, built on real NA spirits at $13 — a St. Agrestis Phony Negroni, an espresso martini with Ritual rum alternative and Pathfinder, Good Vibrations with Ritual gin alternative and Giffard elderflower, a spicy margarita with Ritual agave and Lyre's Italian orange, and a Gold Rush — alongside nine non-alcoholic beers and ciders at $6 and Leitz Eins Zwei Zero wines at $9. IMPORTANT: the venue brands itself a THC-integrated sober lounge. Any cocktail can be upgraded with a 2.5mg THC microdose for $4, and it sells 5mg THC seltzers at $9. The alcohol-free drinks stand on their own, but anyone avoiding all intoxicants should order without the upgrade and skip the seltzers.

Lost Cultures Tea Bar is a fully non-alcoholic bar in Albuquerque's Sawmill District where owner Ryan Brown builds cocktails out of tea rather than out of spirit substitutes. The Ancient Fashioned is pu'erh tea with sugar, orange bitters and wood smoke; the Smokey Rose runs lapsang souchong against grapefruit, lemon, rose simple syrup and foaming bitters; the paloma is built on chamomile with lime, agave and grapefruit soda. Kombucha is poured alongside. Brown does not use the word mocktail for any of it, and the room is a genuine bar rather than a tea shop with a late licence — Friday and Saturday it runs to 10pm.
