Every element of that build is doing the job the alcohol would: gentian and cherry bark supply the bitterness Campari normally brings, juniper stands in for the gin, and the clear ice and garnish mean the drink arrives looking exactly like the one everyone else ordered. Dinner service runs from 4pm daily in one of the Old Port's grandest rooms.

The Paper King is the one to order: Thai tea syrup, pineapple and lemon lengthened with Stappi, the Italian red bitter soda. That last ingredient is the tell — Stappi exists to supply genuine bitterness, and reaching for it rather than another fruit juice is what separates a bar thinking about balance from one thinking about sweetness. The bar opens from 3pm midweek and 2pm at weekends, and is closed Mondays; it is a couple of minutes from Via Vecchia and Andy's.
