Double Standard occupies the historic Rand Building downtown and pours some of the most carefully built zero-proof drinks in San Antonio. Smoke & Mirrors is made with Tenneyson Black Ginger, the non-alcoholic bitter aperitif, and Dreaming of You is a passionfruit build that runs sweeter for anyone who wants it. The name is a small joke that lands well here — a bar called Double Standard applying a single standard to both halves of its menu — and the late hours help, running to midnight midweek and 2am on Friday and Saturday in the middle of the downtown hotel district.

Idle Beer Hall & Brewery on Brooklyn Avenue is a working brewery that also keeps four named mocktails on its list — a Southside, a Spanish gin and tonic, a beachside fizz and a French twist. A brewery bothering to build proper cocktails for people who are not drinking beer is genuinely unusual, and the choices are telling: a Southside and a Spanish G&T are both dry, herbal, bitter-leaning drinks rather than sweet ones. The Moon's Daughters is the rooftop bar at the Thompson Hotel, twenty floors above the River Walk with the best view in downtown San Antonio, and it keeps named zero-proof drinks on the list — Pluto's Revenge and Feeling Prickly, the latter built on the prickly pear that turns up across the city's better alcohol-free menus. Rooftop bars are usually the worst rooms for a non-drinker, because the whole proposition is a cocktail and a view at sunset. Fermenteria on East Commerce Street builds its drinks around fermentation, which is the single most useful technique available to anyone making a serious alcohol-free drink — it produces acidity, funk and depth that no amount of fruit juice can imitate. The named zero-proof options are Butterfly Blossom, a pineapple coconut, and a strawberry lime tulsi built on holy basil. A venue whose whole identity is fermentation is naturally equipped for this category, since the process that makes kombucha interesting is the same one that makes wine interesting, minus the alcohol. Note the narrow window: it opens Thursday through Saturday only, from 4pm, and is closed the rest of the week.
