Chef-patron Adam Reid, a BBC Great British Menu winner, took over the room in 2016 following Simon Rogan's departure and has built a reputation for bold, playful modern-British cooking rooted in Northern ingredients. The restaurant holds four AA Rosettes and a listing in the Michelin Guide, and its multi-course menus are finished and explained tableside by the kitchen team.

The reason it earns a place in a non-alcoholic directory is its drinks programme. Alongside the traditional wine flight, the restaurant offers a full non-alcoholic flight designed to pair with each course of the tasting menu, positioned as a direct alternative to the wine pairing rather than a token substitute.
