The Hamm's Brewery complex on Saint Paul's East Side has been slowly reoccupied over the past decade, and in December 2025 the former 11 Wells Spirits space — originally the brewery's blacksmith shop — became Voliere Spirits, an all-women-owned distillery making small-batch spirits on site, with CrowBar as its tasting room and cocktail lounge. Lead distiller Seth Reid, who had worked at 11 Wells, returned to run production. Grete Bergland runs the bar. Angie Littleton designed the room, and Mpls.St.Paul Magazine described the result in December 2025 as holding "a glorious wall of beer cans, twinkling trees sprouting up among leather couches; lampshades perched on mannequins; a 'confessional' booth with a rotary dial telephone." Food is currently ordered by QR code from neighbouring Saint Paul Brewing while CrowBar develops its own menu.
The non-alcoholic list is the reason it belongs on this site. Every zero-proof drink is $8 — flat, across the board — and the builds are as involved as anything on the alcoholic side. The most extreme is the one with the longest name, a savoury drink of roasted strawberry and tomato with balsamic and champagne vinegar, caper, basil, aquafaba and prosciutto, which is closer to a gazpacho than to a soft drink. Alongside it sit an orange, oat milk, vanilla and lemon build finished with frozen Greek yogurt balls; a charred-citrus drink with baking spices, rosemary, lemon and soda water; and a strawberry-lemon-rose slushie. Handcrafted French sodas with cream run to black cherry, raspberry, mango, grapefruit, lime and sour grape, with rotating Italian sodas a dollar cheaper. Mpls.St.Paul Magazine singled out Bergland's use of "a mocktail made with roasted red and golden beet shrub and Hungarian paprika," which gives a sense of the register. The bar is licensed and pours the distillery's own spirits, so this is not an alcohol-free venue — but the zero-proof column is genuinely part of the programme.
