Matilda Midnight sits on East 10th Street in downtown Chattanooga and builds its whole identity on tarot: the cocktails are named for the cards, the room is dark and candlelit, and the experience is pitched somewhere between a cocktail lounge and a séance. It is exactly the kind of bar where a non-drinker usually ends up holding a glass of soda while everyone else gets the theatre.

That is not what happens here. The Abundance is a mocktail with a card of its own, and it is built rather than poured — coconut water, a house-made cream, pineapple, lime, lavender syrup and soda. The house cream is the technical detail that matters: making your own means the alcohol-free drink has body and texture, which is the single hardest thing to replicate without a spirit and the thing most mocktails fail at. Lavender and lime give it aromatics; the coconut water keeps it from turning cloying.
