Merchant opened on South Pinckney Street off the Capitol Square and spent the following years as the bar other Madison bartenders cite — a serious cocktail room with a kitchen, in a city that did not have many when it started. It is on the short list every local publication reaches for when writing about drinking well in Madison, and it turns up on the short list for drinking well without alcohol too, which is a different and rarer distinction.
The drink to know is the No Regrets, built on a non-alcoholic gin alternative — City Cast Madison records it on the menu as "gin-ish" — with rosemary and lime. That is a deliberately austere construction. There is no fruit purée and no syrup doing the heavy lifting; the juniper-forward base carries the aromatics, the rosemary extends them, and the lime supplies acid, so the drink finishes dry. It is the sort of thing a bar makes when it has thought about what a non-drinker actually misses, which is usually bitterness and length rather than sweetness. That density is unusual — most cities in this registry have their zero-proof depth scattered — and it makes an evening downtown genuinely plannable. Merchant is closed on Mondays and serves brunch from 9am on Saturday and Sunday.
