Merchant opened on South Pinckney Street off the Capitol Square and spent the following years as the bar other Madison bartenders cite — a serious cocktail room with a kitchen, in a city that did not have many when it started. The drink to know is the No Regrets, built on a non-alcoholic gin alternative — City Cast Madison records it on the menu as "gin-ish" — with rosemary and lime. There is no fruit purée and no syrup doing the heavy lifting; the juniper-forward base carries the aromatics, the rosemary extends them, and the lime supplies acid, so the drink finishes dry.
