Restaurant Olivia opened in January 2020 at 290 South Downing Street, on the South Gaylord side of Washington Park, as the second project from chef-proprietor Ty Michael Leon, beverage director and proprietor Austin James Carson, and hospitality director and proprietor Heather Morrison, for whose daughter the restaurant is named. It is a pasta restaurant first, with everything rolled and cut in house, and the run of recognition it has collected since is unusual for a room of its size: entries in the Michelin Guide Colorado in 2024 and 2025, a James Beard nomination for Outstanding Hospitality, and a 2025 Michelin Service Award. The beverage side is staffed accordingly, with a wine director and three sommeliers under Carson, and the wine list runs deep into Barolo, Barbaresco and northern Italian nebbiolo before broadening out to France and the United States.
The non-alcoholic offering is built into that list rather than kept on a separate card, and at present it runs through bottles and glasses rather than built cocktails. Codorniu Cava "Zero" is poured alcohol-free by the glass at $12, sitting in the same Bubbles line as the Franciacorta and the Bollinger. The Unique Beverages page carries a Non-Alcoholic Sparkling section of three Copenhagen Sparkling Teas at $76 for 750ml: the green-and-white-tea "Bla", the oolong-and-hibiscus rose "Lyserod", and the citrus-and-green-tea "Lysegron". A Non-Alcoholic Wine section follows with Casa Emma's Zeero Bianco and Zeero Sangiovese from Tuscany at $59 each, which means a table not drinking can be poured through a pasta menu from a wine list rather than from a soda gun. Seasonal zero-proof cocktails appear at intervals: Westword's January 1, 2026 round-up described a zero-proof milk punch with a spiced, vibrant flavour and velvety texture, noting it was on for that month only, which is the pattern to expect here. The restaurant serves Tuesday through Saturday from 5pm to 9pm and adds a 20% service charge split equitably among staff. Carson's team runs to a wine director, Scott Thomas, and three sommeliers, which is the reason the non-alcoholic bottles are chosen and described with the same care as the Barolo.
