Restaurant Olivia is a pasta-focused Italian restaurant in Denver's Wash Park / South Gaylord neighborhood, opened in January 2020 by chef Ty Leon, beverage director Austin Carson, and hospitality leader Heather Morrison. Its handmade pasta and beverage program have earned a place in the Michelin Guide Colorado (2024 and 2025), a James Beard nomination for Outstanding Hospitality, and a 2025 Michelin Service Award. Carson's program extends its creativity to a small but genuine zero-proof list rather than treating non-alcoholic drinks as an afterthought. Confirmed spirit-free offerings include a Clarified Milk Punch (Earl Grey, macadamia or hazelnut, blood orange, lemon, cream — served, fittingly, in milk-carton-style glassware), a Pom Pom (pomegranate, mint green tea, ginger, lemon, tonic), and a Spritz "ish" (apple-cinnamon tea, Giffard aperitif, Codorníu Zero).
