The Roosevelt Room

The Roosevelt Room occupies a 1929 railroad warehouse in Austin's Warehouse District and has been one of Texas's defining cocktail bars since it opened in 2015. The space runs 3,750 square feet across two levels — a seated, table-service main bar downstairs with a 36-foot counter and booths around it, and a looser mezzanine lounge upstairs that takes walk-ins. It holds 230.

The cocktail programme runs past eighty drinks and is anchored by the Classics Board, a 53-drink timeline covering seven eras of bartending history from pre-1880s staples through tiki to the present, each rebuilt in the bar's own style. That is a research project as much as a menu, and it explains why the zero-proof list is as good as it is: a bar that treats cocktail construction as a historical discipline does not suddenly stop thinking when the alcohol comes out.

Visit Austin called the zero-proof menu a technical masterpiece, and the drinks bear that out. The NA'Groni is built on verjus rouge and gentian tea — verjus for the sharp acidity of unripe grapes, gentian for the root bitterness that makes a Negroni a Negroni, neither of them a syrup. Glitter & Marigold works orange flower water, pistachio and vanilla. The N'artini uses Seedlip Spice with juniper tea, clarified Asian pear juice and Castelvetrano olives. The Castaway rounds out the named list, and there is a dedicated non-alcoholic spirits section on the back bar.

Clarification and gentian are the tells. Clarifying a juice strips the cloudiness and leaves a drink with the clean weight of a spirit-based one, and gentian supplies genuine bitterness rather than a sweet approximation of it. Both are labour, and both are what separate a zero-proof menu that has been thought about from one that has been assembled.

This is a full-service bar where alcohol is the main business, but a non-drinker here is ordering from the same kitchen of ideas as everyone else. Open daily from 3pm, with happy hour until 6pm.
