Vue de monde is one of Australia's benchmark fine-dining restaurants, occupying Level 55 of the Rialto Towers at 525 Collins Street in the Melbourne CBD, with floor-to-ceiling views stretching from the Docklands to the Dandenongs. Founded by chef Shannon Bennett, the restaurant serves a modern, native-ingredient-driven degustation and remains a fixture on Melbourne's best-restaurant lists into 2026.

The non-alcoholic offering here is a genuine, considered course-by-course pairing rather than an afterthought. Priced at A$120 per person, it is designed to sit alongside the Chef's Tasting Menu and was created as a collaboration between Vue de monde's sommeliers and the bartenders at the venue's adjoining Lui Bar. The line-up is built from sans-alcohol cocktails, prestige teas and beverages made in-house specifically for the pairing, so it changes with the menu rather than pouring commercial NA products.

Guests who want to go deeper on tea can instead choose the dedicated tea pairing at A$150 per person, which moves through rare and exclusive teas sourced from around the world and served in carbonated, blended, cold and warm forms. Both routes give a fully alcohol-free diner a drinks experience matched to the food at the same level of intent as the wine list.

The room is a special-occasion destination: reservations open roughly three months ahead and sell out quickly, and service runs across dinner Wednesday to Saturday with lunch added on Fridays and Saturdays. For non-drinkers, it is one of the few Melbourne kitchens at this altitude, literally and figuratively, that treats the zero-proof pairing as a first-class part of the menu.
