Amass is a Los Angeles botanical beverage company co-founded by master distiller Morgan McLachlan, known for its gin and vodka and for a portfolio of botanic self-care and non-alcoholic products. The brand entered the zero-proof category in January 2021 with Riverine, its distilled non-alcoholic spirit.
Riverine is built from a regional blend of 14 organic botanicals — including juniper, sumac, sorrel, lemon peel, apple, coriander, mint, parsley, rosemary and thyme — meant to evoke the temperate rainforest of the Pacific Northwest, where McLachlan grew up. Rather than relying on alcohol, each botanical is individually distilled using a proprietary hydrosteam process in which water vapor extracts the essential oils, yielding a crisp, coniferous flavor profile. It is distilled and bottled in British Columbia, Canada.
The spirit is alcohol-free (0.0% ABV) and contains zero calories per 1.5 fl oz serving. Sold in 750ml bottles, Riverine is positioned for sipping over ice with tonic or as the base of non-alcoholic cocktails, presented as a spirit in its own right rather than a gin substitute.

The Zero Co.
Poncey-Highland
The Zero Co. is Atlanta's first dedicated non-alcoholic bottle shop, opened in December 2022 in the Poncey-Highland neighborhood by Cory and Malory Atkinson, the husband-and-wife team behind nearby Elemental Spirits Co. The shop grew out of the rapidly growing zero-proof section at Elemental and stocks more than 500 non-alcoholic products — spirit alternatives, de-alcoholized wines, NA beers, and ready-to-drink cans — alongside locally made shrubs, vinegars, bitters, and elixirs. A bar-cart sample station lets customers taste before buying, and the space hosts tastings and events. Carried brands include Ghia, Seedlip, Lyre's, Wilderton, Ritual Zero Proof, De Soi, Three Spirit, Free Spirits, Athletic Brewing, and more. As co-owner Malory Atkinson put it, the goal was a "warm and welcoming" space for all kinds of drinkers and non-drinkers.
Lady Jane
LoHi
Lady Jane is a neighborhood cocktail bar on West 32nd Avenue in Denver's LoHi (Lower Highlands) neighborhood — airy, plant-filled, and known for a seasonal menu that rotates frequently and a collaborative bar team. Westword describes the non-alcoholic program as having 'a permanent place' on the menu, not a dry-January promotion, and 5280 Magazine calls it one of the most ambitious mocktail programs in Denver. The lineup of named NA drinks tends to be more inventive than at most cocktail bars: the Bay Leaf Cream Soda is built on Seedlip Grove 42 with quince, lemon, and vanilla; the Pineapple No-groni layers bitter botanicals from Giffard, Martini, and Amass; the Morada Colada uses Three Spirit Nightcap with Chicha Morada (a Peruvian purple-corn drink), pineapple, coconut, pear, apple, and lime; and the alcohol-free Persimmon Soda is finished with maple, fenugreek, and mace. The venue was named Reader's Choice Best Bar in 5280's Top of the Town 2023 awards, and the team's broader cocktail program has been covered by Thrillist, Eater Denver, Imbibe Magazine, 303 Magazine, and Denver Life. Lady Jane operates primarily first-come-first-served with limited reservations available.
The Loyalist
West Loop
The Loyalist is a chef-driven restaurant and bar that opened in summer 2016 at 177 N Ada Street in Chicago's West Loop, occupying the garden level beneath Smyth, its three-Michelin-starred sibling. Both are run by husband-and-wife chefs and co-owners John Shields and Karen Urie Shields, who met at Charlie Trotter's; Karen Urie Shields earned a James Beard "Outstanding Chef" nomination in 2024. The Loyalist is the more casual, neighborhood-bistro counterpart, known for its cheeseburger and an ingredient-focused menu. Its bar runs a dedicated "Spirit Free Cocktails" section of seasonal zero-proof drinks alongside its full cocktail list. Current named options include an Herbal & Citrus build with Seedlip Garden, basil, yuzu and ginger; a Velvety & Smooth amaretto-style drink with Lyre's Amaretti and almond orgeat; and a Juicy mix of Seedlip Grove, pineapple, smoked morita pepper and lime. Athletic Brewing non-alcoholic beers are also poured.
Williams & Graham
LoHi (Highland)
Williams & Graham is a Prohibition-style speakeasy in Denver's LoHi neighborhood, entered through a hidden door disguised as a bookcase in a faux bookstore. Bartender Sean Kenyon opened it in 2011 with partner Todd Colehour, and it has become one of the country's most decorated bars — a James Beard nominee for Outstanding Beverage Program, a World's 50 Best Bars listee, and a Tales of the Cocktail Spirited Awards winner. Alongside its classic cocktails, it keeps a dedicated "Temperance" zero-proof section (around $12) built on serious non-alcoholic spirits rather than simple mocktails: the Staycation (The Pathfinder, chocolate and roasted corn, Coco Lopez), My Bitter Clementine (Earl Grey, clementine shrub, Giffard Aperitif, lemon), Heat Seeker (Three Spirit Nightcap, Amass Riverine, gochujang), and Imposter Syndrome. A second outpost operates at Denver International Airport.
Yunta Nikkei
South End
Yunta Nikkei is Charlotte's first Peruvian-Japanese (Nikkei) restaurant, opened in 2022 by the Viva Chicken team in South End, blending raw ceviches, tiraditos, and handmade maki with an intentional zero-proof cocktail program. Beverage director Ashley Sarkis built a dedicated mocktail menu anchored by premium NA spirits including Seedlip Garden and Amass Riverin, earning Yunta a spot on Yelp's top 25 mocktail programs in the U.S. in 2024 — the only North Carolina restaurant on that list. Guests can choose from named zero-proof cocktails like The Gardener and Isle del Sol alongside NA beer, making it one of Charlotte's strongest NA options in a full-service restaurant setting.
LÝRA
Fulton Market
LÝRA is a modern Greek restaurant in Chicago's Fulton Market from DineAmic Hospitality, offering wood-hearth-fired Mediterranean fare alongside a documented non-alcoholic drinks menu that includes two named zero-proof mocktails and an alcohol-removed wine list.
