Kava is a root from the South Pacific — Kava Kasa sources its own from Vanuatu — and it is psychoactive: it is drunk for a sedating, mildly euphoric effect, which is worth stating plainly for anyone in recovery who is weighing whether the room is right for them. Drinks are ordered in two steps, a kava grade followed by a mixer, and served in a shell with a spoon. It carries a standing spirit-free cocktail list rather than seasonal improvisation: One For The Honey is built on Ghia aperitif with honey, lemon, strawberry puree and soda, and Kelly Kapowski combines strawberry, vanilla simple syrup and mandarin Jarritos under a marshmallow cold foam. Rotating non-alcoholic beer from Athletic Brewing and rotating High Noon seltzers fill out the range. One practical warning worth carrying: the domain thewinchester.net is not theirs and now serves unrelated casino content. The venue's actual site is winchestergr.com, and reservations run through Toast.

    The Knickerbocker is New Holland Brewing's Grand Rapids brewpub, on the Bridge Street strip at 417 Bridge Street NW. It is a large room by brewpub standards — three separate bars, a wood-fired oven, indoor and outdoor beer gardens and several private dining spaces. Its relevance to non-alcoholic drinking is that New Holland brews its own alcohol-free beer rather than stocking somebody else's: Zylch IPA is a 0.00% ABV IPA made with ingredients that let it carry real malt and hops. The brewery also produces Aquanut, a non-alcoholic sparkling water, and the bars mix a selection of zero-proof cocktails. In a city that has called itself Beer City USA since 2012, this is the brewery that answers the question of what a non-drinker orders.
