100 Sails Restaurant & Bar occupies the ground floor of the Prince Waikīkī at 100 Holomoana Street, on the harbour side of Waikīkī where the district meets the Ala Wai boat basin. It is best known locally as a buffet room, with breakfast, lunch and dinner services and a Sunday brunch, and the view over the masts is the reason most people book it. The trading pattern is unusually wide — breakfast from 6.30am, lunch through the middle of the day, dinner to 9pm or 9.30pm — which makes it one of the few venues in this guide usable at almost any hour.

The non-alcoholic program is built on the same principle as the food: make the components rather than buy them. The mocktails use house-made syrups and local ingredients, and the three flavours the bar leads with — ginger lemongrass, hibiscus, and ube — are chosen for what they can do without a spirit. Ginger and lemongrass bring heat and aromatic length; hibiscus brings acidity and tannin, which is the closest a non-alcoholic drink gets to the structure of wine; and ube, the purple yam that runs through Filipino cooking across Hawaiʻi, brings body and a mild nutty sweetness plus a colour no other ingredient produces. Using local produce this way is not incidental in a hotel restaurant — it is the difference between a drink that belongs to this place and a generic sweetened juice. The detail that says most about the venue's intent is a small one: mocktails are included in the daily happy hour alongside the cocktails, rather than excluded from it. Happy-hour exclusion is the standard, quiet way a bar signals that the zero-proof list is a courtesy rather than a product, and charging full price for a drink with no spirit in it is the most common complaint non-drinkers have about hotel bars. Including them is the cheapest possible way to signal the opposite, and very few rooms do it.
