Aguasal by José Andrés

Aguasal by Jose Andres opened in June 2025 inside the Andaz Miami Beach in Mid-Beach, the first stage of the Jose Andres Group taking over dining at the oceanfront resort. The name comes from agua salada — saltwater — and the all-day coastal Mediterranean menu draws on Mallorca and Mykonos, running Kumamoto oysters, mussels saganaki and whole snapper served indoors or on the terrace, steps from the sand on Collins Avenue.

Hotel restaurants are usually where alcohol-free drinks are handled worst: the guest is presumed to be on holiday and therefore drinking, and the list defaults to a frozen cocktail and a soda. Aguasal keeps the selection small but deliberate, and the construction is what distinguishes it. The Cardamom & Ginger works cardamom and citrus with sakura and ginger beer. The Mediterranean Milk Punch is a lavender-cardamom tea with pomegranate, fenugreek and mint, dairy-clarified — a technique that takes days and produces a silky, translucent drink, and one almost nobody attempts for a non-alcoholic menu.

Athletic Brewing's Free Wave hazy IPA covers beer, with fresh juices, Per'la coffee and Art of Tea infusions filling the rest of the day. A separate upstairs bar, Bar Centro, extends the group's spirit-free options.

The Greater Miami Convention & Visitors Bureau described the mocktails as Mediterranean-inspired and feeling intentional and refined, which is the right word — two drinks made properly beats eight made carelessly, and a clarified milk punch on a resort menu is a decision rather than an accident.

It is a full-service restaurant with a bar and resort pricing, not an alcohol-free venue. Being inside a hotel means it is open all day, which makes it one of the more usable Mid-Beach options for a lunch or a coffee rather than only a dinner.
