AVIV sits at 2341 Collins Avenue inside 1 Hotel South Beach, and is the Miami project of chef Michael Solomonov and restaurateur Steve Cook, described on the restaurant's own site as an acclaimed Israeli-born chef and a renowned restaurateur, both multi-time James Beard Award winners. The restaurant's own description explains the name — aviv is Hebrew for spring — and frames the cooking as ancient technique brought into a room that reads as much Miami as Tel Aviv. It keeps an unusual two-part schedule: breakfast every morning from 7am to 11:30am, then dinner from 5:30pm to 10pm, extending to 11pm on Friday and Saturday.

The alcohol-free build documented at the bar is the Almond Blossom. It uses Seedlip Grove 42 — the blood-orange-and-lemongrass expression from the London non-alcoholic distiller — with orgeat, yuzu juice and yuzu soda, which is a considered combination rather than an obvious one: orgeat brings almond richness and body, and the two forms of yuzu supply enough acid and aromatic lift to stop the drink turning cloying. RESIDENT covered it in its December 2025 Miami survey, wrote that the drink reflects the restaurant's ingredient-driven approach, and described it as feeling layered yet restrained and as a refined option for guests seeking clarity and balance. Only one named alcohol-free drink is published, so the programme is recorded here as real but modest. Watr at the 1 Rooftop, the eighteenth-floor bar in the same building, runs a separate alcohol-free build and is listed as its own entry; between them the two make 1 Hotel South Beach one of the more usable addresses in South Beach for a guest who is not drinking. Two practical notes. The restaurant serves breakfast every morning from 7am, which makes it one of very few morning options on this list. And no zero-proof section appears anywhere on the restaurant's published site, so a guest should ask for the Almond Blossom by name rather than expecting to find it printed on the card.
