Bar RBC

Bar RBC sits on Minnesota Avenue in the middle of downtown Bend, and it is the most polished cocktail room in a town whose drinking culture is otherwise built on breweries and flannel. The bar runs a proper zero-proof menu — a named section with its own drinks, not a pair of substitutions offered on request — which in a beer town is a deliberate statement about who the room is for.

The two documented builds cover opposite ends of the spectrum, which is the sign of a list designed rather than assembled. The Phony White Negroni takes on the harder assignment: a white negroni depends on the interplay of gentian bitterness and floral gin botanicals, with no fruit to disguise a weak base, so getting it crisp rather than flat is real work. The Shindig goes the other way entirely — pineapple and lime, punchy and bright, the drink for a warm evening on the sidewalk tables rather than a slow one at the bar.

Downtown Bend is compact enough that Bar RBC sits within a few blocks of Deschutes' public house, Zydeco, San Simón, Silver Moon and Dear Irene, which makes an evening of zero-proof drinks genuinely walkable here in a way it is not in most cities this size.

The room opens at four every day and runs to nine through the week and ten at weekends. It takes the food side seriously too, so it works as a dinner destination rather than only a drinks stop.
