Dear Irene is a small, low-lit room on Brooks Street in downtown Bend, a few steps off the main drag near Drake Park, serving small plates and a tightly-made cocktail list. The Path Less Taken is the drink that earns it. It is built on Pathfinder — the hemp-derived, distilled non-alcoholic spirit made in Oregon, bitter and herbaceous in a way that behaves like an amaro — with bitters, landing squarely in old fashioned territory: spirit-forward, aromatic, meant to be sipped slowly. That is the hardest register for a zero-proof drink to hit, because there is no citrus or fizz to carry it, and it is the register most non-drinkers miss most. There is also a Monkey Business, named for the mischievous-monkey wallpaper in the bathroom, which tells you something about the room's sense of humour.
