The Coupe & Flute opened in 2022 as a small, art-deco "champagne tavern" in North Beacon Hill, owned by Brooke St. Sauver and Curt Waller, who built the concept after a trip to Champagne and visits to bubbly bars around the U.S. By night it serves sparkling wine and small plates like deviled eggs, bao buns and frites; on weekend mornings it shifts to an acclaimed brunch.
Its non-alcoholic program leans on the bar's bubbles-for-everyone philosophy, with a spirit-free lineup that all involves carbonation: a spoof on an Aperol spritz made with Wilderton Aperitivo, a sparkling matcha-orgeat concoction, and an olive-brine dirty martini built with non-alcoholic vermouth.
