Rosette

Rosette is a small worker-owned bar and restaurant in Rainier Beach, opened in 2025 by members of the same collective that runs Jude's Old Town — Seattle's first worker-owned bar and restaurant — two doors down the same block. It signs its own about page "in solidarity, the members of Rosette", and the room is genuinely tiny: a rectangular space just under eleven feet wide, painted teal. Mark Paschal, who helped found Jude's and spearheaded this one, has explained the thinking twice and both versions are worth having. To Seattle Refined: for too long, people who don't drink alcohol have been treated as an afterthought in bar spaces, and at Rosette thoughtfully constructed non-alcoholic cocktails and spirits are meant to shine and offer a true bar experience without alcohol — drinkers can still enjoy the ritual of the cocktail without needing alcohol to do so. And to the South Seattle Emerald, more sharply: even when places do have non-alcoholic cocktails on the menu it can still feel like you're being ignored, so they wanted to put front and centre the idea that there can still be sociality in bars where the social lubricant is other people and not alcohol. Nyannah Jackson is among the other worker-owners. Food is small and good — marinated olives at $7, a cassava cake with plum cardamom sauce at $13, a cacio e pepe ice cream at $12.

The drinks list is headed N/A Cocktails and everything on it is $15. In Bloom is the aperitif, layering Figlia Fiore and Lumette Bright Light with lemon, rose blossom syrup and Woody's non-alcoholic sparkling wine. Minimal Intervention is deliberately spare — DHOS non-alcoholic vodka, lemon, strawberry-mint syrup. Refined Prop Comic runs Lumette's non-alcoholic rum with Ghia against an orange-carrot syrup. Spirited Away is the serious one, and the closest thing here to a stirred whiskey cocktail: Free Spirits bourbon with Pathfinder, vermouth, red bitter and aromatic bitters. Alongside them sit real wines and a non-alcoholic sparkling rosé from Woody's at $11, with an N/A cocktail of the day at $12 during happy hour. One thing to know before ordering: a fifth drink on that same non-alcoholic list, Pine for the Days, contains kava — a plant with genuine mild sedative effects, not alcohol and not cannabis, but not inert either. It is not flagged as such on the menu, so order around it if you are avoiding all intoxicants.
