Dayglow opened on Sunset Boulevard in Silver Lake in late 2017, from Tohm Ifergan, who had come from Portola Coffee Roasters down in Costa Mesa, and the coffee trade press described it at the time as a neon-bright beacon not unlike the city itself. The premise was to give customers unusual coffees and a side of information with them, and nearly a decade on that is still the shape of it. Time Out gave the Los Angeles rooms five stars in 2025 and put the appeal plainly: part neighbourhood hangout and part subscription service, a haven for serious coffee drinkers and dabblers alike, where the standout part of the menu remains the slightly pricey house signature drinks, which take a craft-cocktail approach to dispensing caffeine. That last phrase is exactly why a non-drinker should care — these are constructed drinks with syrups, spices and textures rather than a latte with flavouring in it, and the signature list is where the interest lies: the Military Latte, the Warhol, the Totoro and a strawberry matcha are the ones people come back for.

The multi-roaster claim is the other reason to come, and it holds up under checking. Dayglow's retail shelf carries well over a hundred different beans, and the roasters on it are a serious international list — Tim Wendelboe and Nomad, Coffee Collective and Prolog out of Copenhagen, La Cabra, Friedhats, Dak, Morgon, Monogram, Rogue Wave — alongside its own house roasts, at anything from $20 to $84 a bag. Very few American cafés stock at that breadth, and for someone who has replaced an evening drink with an interest in coffee, this is close to the best shelf in the city. Two honest limitations. We cannot give you current prices or recipes for the signature drinks, because Dayglow publishes its online store but not its café menu, and the third-party listing sites that appear to carry it turned out to be stale or, in one case, padded with fabricated boilerplate — we would rather say so than repeat numbers we cannot stand behind. And practically, Time Out's caveat is worth passing on: seating is limited and outlets are scarce, so this is a place to drink coffee and talk rather than to work.
