Forget Me Not

Forget Me Not occupies a set-back space at 227 Clayton Street in Cherry Creek North, reached through a courtyard rather than off the sidewalk, and has traded as one of the neighbourhood's better-regarded cocktail rooms since its debut. The drinks list is organised into categories — sparkling and low-ABV, light and refreshing, rich and stirred — with two large-format offerings and a standing zero-proof section that rotates with the seasons. That structural decision is what separates the bar from most licensed rooms in the city: the non-alcoholic drinks are not a courtesy list kept behind the bar, they are a printed heading on the same menu at the same price point, currently $13 each against a cocktail list that sits in similar territory.

The three house zero-proof cocktails are all built on Seedlip non-alcoholic spirits and structured like the full-proof drinks around them. Deep Roots is the earthy one, combining Seedlip with tarragon, beet, ginger, citrus and Stappi red bitters, which gives it the bittersweet backbone that most alcohol-free drinks lack. Green Machine is the bright, vegetal counterpart, built from Seedlip with cucumber, salted lemon and ginger. Osaka Afternoon is the floral option, layering cherry blossom and elderflower over Seedlip with tonic and lemon. Beyond the house drinks the section carries Cali Water prickly pear cactus water at $7 and a set of large-format still and sparkling waters. Both of Denver's main food-and-drink publications have picked the bar out specifically for this program: Visit Denver's December 2025 alcohol-free cocktail guide describes it as "a bright and cheery spot to snack on small plates... while sipping a zero-proof cocktail", naming the Green Machine and Deep Roots, and 5280's mocktail round-up lists the same two drinks. The food menu runs to small plates designed for grazing rather than a full dinner — salmon crudo, street corn dip and wagyu steak tartare among them — which suits a room that fills after work and trades until 2am.
