Merriman's Honolulu trades from Suite 170 at 1108 Auahi Street in Ward Village, the master-planned stretch of Kakaʻako running down towards Ala Moana. It is the Honolulu room of Peter Merriman, who opened his first restaurant in Waimea on Hawaiʻi Island in 1988 and was one of the twelve chefs who founded Hawaii Regional Cuisine in 1991 — the movement that established local sourcing as the default expectation for serious cooking in the islands rather than a novelty. The group now includes Monkeypod Kitchen, which appears separately in this guide at the OUTRIGGER Reef in Waikīkī.

The zero-proof drink the restaurant is documented for is the Maikaʻi Zero Proof Mai Tai, and the interesting part is the honey liliko'i foam it is finished with. The mai tai is the drink Hawaiʻi sells more of than any other, and it is also one of the harder cocktails to build without alcohol, because what rum contributes is not just flavour but weight — a viscosity and warmth that fruit juice alone cannot replace, which is why most virgin mai tais taste thin. A foam is a direct answer to that problem: it adds body and a slow mouthfeel at the top of the glass, and using honey rather than syrup gives it a rounder sweetness, while liliko'i — passionfruit — supplies the sharp acidity that stops the whole thing collapsing into sugar. Whether the drink is currently listed should be checked when booking, since the published reference for it is a few years old and restaurant lists at this level rotate. What does not change is the context: this is a special-occasion room from one of the most significant chefs in the state, in a district dense with other options, and a table here that includes someone not drinking is not going to be handed a glass of pineapple juice.
