Pascual

Pascual opened in February 2024 at 732 Maryland Avenue NE, a block off Barracks Row on Capitol Hill, from chefs Isabel Coss and Matt Conroy - the same pair behind Lutece in Georgetown, though this is a very different room. The cooking is modern Mexican built around fire: a wood-fired open kitchen, masa ground and pressed in house into tortillas, and heritage ingredients treated as the point rather than the garnish. The reception was immediate. In 2024 it was named one of Eater's Best New Restaurants in America and topped Best New Restaurant lists from both the Washington Post and Eater DC; it is included in the Michelin Guide; and in 2025 Coss and Conroy were James Beard Award semifinalists for Best Chef: Mid-Atlantic.

The bar is small and mezcal-leaning, and it extends the same care to the drinks without alcohol in them. The foundation is rotating aguas frescas, which is the right base for a kitchen working with this fruit, and above them sit named zero-proof cocktails. Washingtonian highlighted two during Dry January: the Temperate Margarita, built with non-alcoholic tequila and orange liqueur so it keeps the structure of a margarita rather than becoming limeade, and the Nada Colada, a pina colada riff lifted with a hint of mango. Next door the restaurant runs Volcan, a panaderia-style window serving Mexican pastries, cafe de olla and aguas frescas, which is worth knowing about independently - it means there is somewhere on this block for a good non-alcoholic drink during the day without a reservation.

Practical notes. Pascual is closed Monday and Tuesday. Dinner runs Wednesday and Thursday 5pm to 9pm, Friday and Saturday 5pm to 9.30pm, and Sunday adds a brunch service from 11am to 2pm before dinner from 5pm to 9pm. The dining room is intimate and heavily reservation-driven, so this is not a walk-in proposition at weekends; the Volcan window is the fallback. Eastern Market and Union Station are both walkable, and Barracks Row itself has enough going on to build an evening around.
