2200 California St, Denver, CO 80205
Pig and Tiger opened in August 2025 at 2200 California Street in Five Points, the first bricks-and-mortar home for a concept that co-chefs and co-owners Darren Chang and Travis Masar started in 2020 as a stall inside Avanti in Boulder. The name is literal: Chang was born in the year of the Pig and Masar in the year of the Tiger. Chang is a Top Chef alum, and the cooking is Taiwanese night-market food read through European technique, with a menu built around chilli wontons of shrimp and pork with zha cai, jellyfish salad, Sichuan green beans with fermented garlic and aged vinegar, Taiwanese fried chicken with chicken-fat rice and orange hot honey, and a lu rou fan of braised pork with shiitakes, mustard greens and a soft-cooked egg. Desserts run to shaved ice with almond panna cotta and a blackberry sorbet dusted with green Sichuan and salted plum powder.
The bar's structural decision is the one that matters here: there is one drinks list, and the drinks that can be made without alcohol are marked on it with a heart and a $12 price, so a non-drinker orders from the same page as everyone else. Reviewing the restaurant, 5280 wrote that cocktails and mocktails share the same menu, which more restaurants should do so that no one feels singled out. As the menu stands, two drinks carry the mark. The May Mei is a Taiwanese salted plum spritz, described on the menu as an ode to chef Darren's mother, and it is the house signature in either format. Curious Mr. Brown is built on coffee and monkey bread tea, a nod to the ubiquitous Mr. Brown canned coffee of Taiwan, and reads as an espresso-martini analogue without the spirit. Both are constructed with the same house syrups and scrap-derived sugars as the full-proof cocktails, and large-format drinks arrive in teapots. The menu turns with the seasons, so the marked set changes; Westword's January 2026 round-up covered a broader winter list that included a shaved-ice Baobing Sour. The restaurant is closed Mondays and Tuesdays and runs 5pm to 9pm midweek and to 10pm on Friday and Saturday.
