Founded in 2013 by Bob Bonder and Bryant Goulding, Rhinegeist ("ghost of the Rhine") took over the cavernous former Christian Moerlein bottling plant, an 1895 brick landmark on Elm Street in the heart of Over-the-Rhine's historic Brewery District. The taproom quickly became a cornerstone of Cincinnati's craft-beer renaissance and one of the region's largest independent brewers, known for its soaring industrial hall, cornhole and ping-pong, and a popular rooftop bar overlooking the neighborhood.

The brewery had explored non-alcoholic beer for years but held back until it could match its own quality bar, lacking both pasteurizing equipment and space. The breakthrough came through a partnership with Sustainable Beverage Technologies and its patented BrewVo process, a nested-fermentation method that repeatedly strips alcohol from partially brewed beer while adding fresh wort for additional fermentation. The result launched in August 2025 as Ghost, a dedicated NA sub-brand. Ghost Pils is a non-alcoholic German pilsner with smooth, bready malts and floral German hops that won a bronze medal in the Non-Alcoholic Beer category at the 2025 Great American Beer Festival; Ghost Haze is a full-flavored NA hazy IPA. Both are at or below 0.5% ABV, sold in 12oz six-packs, and distributed across nine states (Ohio, Kentucky, Indiana, West Virginia, Illinois, Pennsylvania, Michigan, Tennessee and Wisconsin). A West Coast-style Ghost Hops IPA joins the line in early 2026.

The taproom sits at 1910 Elm St and is open Monday–Thursday 3–10pm, Friday–Saturday noon–midnight and Sunday noon–9pm; reach it at (513) 381-1367 or @rhinegeist on Instagram. It suits groups, game nights and anyone wanting a lively brewery atmosphere without missing out. Note that this is a full working brewery whose core business is alcoholic beer, so the Ghost NA beers are most reliably found in cans and six-packs for pickup; call ahead if you specifically want them on draft.
