The Starlite Bar

East 11th Street through Tulsa is historic Route 66, and the Pearl District stretch of it has become a small bar quarter. The Starlite is one of its anchors — a neighbourhood room rather than a destination cocktail bar, open 4pm to 2am from Tuesday through Sunday.

The alcohol-free drink is the Ginger Rogers, and it is worth explaining why a simple build earns a listing. Ginger beer, fresh lime, house ginger syrup and club soda is a double-ginger highball: the commercial ginger beer provides carbonation and a baseline of spice, and the house ginger syrup layers a fresher, sharper heat on top of it. Lime supplies acid and soda extends it. The result is long, dry and genuinely spicy rather than sweet, which is exactly what someone wants to hold for two hours in a bar.

That is the practical test this directory applies to a room like this. A late neighbourhood bar does not need an elaborate zero-proof programme; it needs one drink that is properly made, low in sugar and long enough to last, so that a non-drinker can sit through an evening without either getting bored or getting sick of sweetness. The Ginger Rogers is that drink, and Tulsa Remote picked it out in its January 2025 ranking of the city's mocktails.
