The Whale: A Craft Beer Collective

The Whale: A Craft Beer Collective opened in October 2017 at 507 Haywood Road in West Asheville, behind Haywood Common, from owners Jesse Van Note and Andrew Ross — two friends who met working together at an Asheville brewery years earlier. Their framing of the project explains the odd name: a craft beer collective was something they spent a long time thinking about, and they wanted to approach it by gathering ideas about what the community was lacking and building a space they all wanted to hang out in. The aim, in their words, was something approachable and friendly that was also an elevated drinking experience. The room has a Scandinavian aesthetic and a large patio, well-behaved dogs are welcome inside and out, and food comes from the Haywood Common kitchen next door rather than a kitchen of its own. It opens at noon most days and 2pm early in the week, running to 11pm on Friday and Saturday.

What makes it relevant to a non-drinker is the collective model itself. The Whale is a bottle shop as much as a bar, built around curation rather than around its own production — which means the non-alcoholic range is chosen the same way the beer is, by people whose job is finding good things rather than selling their own. Its beer listings carry non-alcoholic categories across styles rather than a single token option: non-alcoholic IPA, porter and stout, sour, lager and other beer all appear as distinct categories, which is a broader spread than most dedicated bars manage and reflects how much genuinely good non-alcoholic beer now exists. The caveat is that neither the shop's own site nor its live listings publish the specific products, brands or prices in a readable form, so what is in the fridge on a given day has to be asked about or browsed in person. Given the format, browsing is the point.
