Tiki is quietly one of the best formats for drinking without alcohol, and Tucana is Birmingham's tiki bar. The reason the format works is structural: a tiki drink is mostly fresh juice, house-made syrups such as orgeat and falernum, spice, acid and a great deal of presentation. Rum is one component among many rather than the backbone. Take it out of a martini and there is nothing left; take it out of a mai tai and you still have a complicated, aromatic, well-garnished drink.
Tucana works that advantage deliberately. Rather than keeping a static pair of mocktails, it rewrites them with the seasons — Bham Now covered a brand-new January menu built around a lineup of them, with a drink called Wanna Pear Up? among the new arrivals. Seasonal rotation is the signal this directory weighs most heavily, because it means someone is doing the work again every few months rather than printing two drinks once and forgetting them.
The room itself is the full tiki treatment, which is worth mentioning for a specific reason: elaborate glassware and garnish are not decoration in this context, they are the thing that makes an alcohol-free drink socially equivalent to everyone else's. Nobody at the table can tell, and nobody has to explain.
