Bar Palmina is Philadelphia's first fully zero-proof cocktail bar, and the distinction matters: everything in the room is alcohol-free, down to the bitters. That last detail is the one most places skip. Standard cocktail bitters run to 35–45% alcohol by volume, and while a few dashes amount to a trace, a bar serving people in recovery cannot reasonably describe a drink containing them as alcohol-free. Sourcing alcohol-free bitters is harder and more expensive than the alternative, and doing it anyway is the clearest possible signal of who this bar is built for.
It opened in Fishtown in 2024, founded by Nikki Graziano, who built it after a 2022 liver transplant caused by alcohol-related liver failure and the sobriety that followed. She named it for her Italian-American grandmother, Palmina. Philadelphia Magazine's Best of Philly coverage put the origin plainly: having embraced sobriety after the transplant, Graziano found the city's non-alcoholic options lacking, and built what was missing.
The menu is unusually deep for the format — around twenty-two signature and classic non-alcoholic cocktails, eleven non-alcoholic wines and proxies, and seven non-alcoholic beers, with house-made infusions running through the list rather than bought-in syrups. The Yuzu Negroni takes the bitter-forward Negroni structure into yuzu, the aromatic Japanese citrus that is more floral and less sweet than lemon. The Limonhattan applies the same logic to a Manhattan. D'Argento and The Lifesaver round out the signatures.
The scale of that list is the point. A fully alcohol-free bar with four drinks is a gesture; one with twenty-two cocktails, eleven wines and seven beers is a bar, and a group can spend an entire evening there without repeating an order or thinking about what they are missing. It trades Tuesday through Saturday, opening at four in the afternoon and running to eleven at weekends, with a two o'clock Saturday start.
