Eve Bar is chef Adam Handling MBE's first venture into bars, opened in 2017 in the basement beneath his Michelin-starred restaurant Frog by Adam Handling on Southampton Street, in the heart of Covent Garden's Theatreland and directly opposite the Savoy. It takes its name and its mischievous motto — "Resist Everything Except Temptation" — from the Garden of Eden, and the mood matches: a small, low-lit underground den with luxe interiors, hung with rotating work by up-and-coming London artists and set apart from the bustle of the Piazza above. Cocktails, Champagne and caviar are the house's stock-in-trade, but the defining feature is a glass-fronted drinks lab where the team distils, clarifies, ferments and carbonates in view of the room.

Eve runs on a near-total zero-waste philosophy, working hand-in-glove with the Frog kitchen upstairs: surplus and byproducts — croissants, thyme sprigs, rhubarb pulp, biscuit trim, offcuts of chocolate — are rescued and redistilled into the bar's own syrups and liqueurs. The current ingredient-led menu, "Adapt" (successor to the earlier "Evolve"), centres each serve on a single seasonal British ingredient, using rotary evaporation, sous-vide, centrifuge clarification and FIZZIQ instant carbonation to build flavour without waste. Crucially for alcohol-free drinkers, Eve treats zero-proof as a first-class category rather than an afterthought: over 80% of the Adapt menu can be enjoyed in non-alcoholic form, and the bar keeps three purpose-built non-alcoholic cocktails on the list at all times.

Those three are genuinely constructed rather than watered down. Strawberries and Cream layers English strawberries and white chocolate cookie syrup over Everleaf Mountain and a clarified milk punch; the Gooseberry pairs the bar's own Eve Lab gooseberry non-alcoholic "Chartreuse" with Everleaf Marine and lime; and the Lemon works a woodruff-and-lemon syrup and black tea with Everleaf Marine and fresh lemon juice. The recurring non-alcoholic backbone is Everleaf, the B-Corp-certified botanical aperitif range, alongside Eve Lab — the bar's own line of non-alcoholic distillates made in that same lab from rescued ingredients. Overseen by Handling and his bar team, the waste-not, ingredient-led approach means the alcohol-free serves shift with the British seasons rather than sitting static.
