Eve Bar is chef Adam Handling MBE's first venture into bars, opened in 2017 in the basement beneath his Michelin-starred restaurant Frog by Adam Handling on Southampton Street, in the heart of Covent Garden's Theatreland and directly opposite the Savoy. It takes its name and its mischievous motto — "Resist Everything Except Temptation" — from the Garden of Eden, and the mood matches: a small, low-lit underground den with luxe interiors, hung with rotating work by up-and-coming London artists and set apart from the bustle of the Piazza above. Cocktails, Champagne and caviar are the house's stock-in-trade, but the defining feature is a glass-fronted drinks lab where the team distils, clarifies, ferments and carbonates in view of the room.
Eve runs on a near-total zero-waste philosophy, working hand-in-glove with the Frog kitchen upstairs: surplus and byproducts — croissants, thyme sprigs, rhubarb pulp, biscuit trim, offcuts of chocolate — are rescued and redistilled into the bar's own syrups and liqueurs. Its earlier ingredient-led menus, "Evolve" and then "Adapt", centred each serve on a single seasonal British ingredient and kept three purpose-built non-alcoholic cocktails on the list at all times — the Strawberries and Cream, the Gooseberry (built on the bar's own Eve Lab non-alcoholic gooseberry "Chartreuse") and the Lemon. The May 2026 menu retired that format along with all three dedicated alcohol-free builds.
What replaced it is thinner but still deliberate. The current list is organised into Martinis, Signatures and Classics, and four serves are explicitly marked as available alcohol-free with named zero-proof bases: the Peachy (poached peach, thyme and London Essence white peach and jasmine soda) remade on Everleaf Mountain; the British Pop (gooseberry, pineapple, woodruff) on Pentire Adrift; the Mirage Paloma (tomato, paprika, pink grapefruit, London Essence soda) on Pentire Seaward; and the house Gin Martini, also offered alcohol-free. The zero-proof bases are named brands — Everleaf and Pentire — rather than Eve Lab distillates, and there is no longer a standing commitment to purpose-built non-alcoholic cocktails. A non-drinker still gets a composed, garnished drink built to the same spec as the full-proof version, but as of the May 2026 menu the alcohol-free offer is an adaptation of the cocktail list rather than a category of its own.
