Palomar is a Cuban cocktail bar and restaurant in Northwest Portland, owned by award-winning bartender Ricky Gomez, who won the inaugural Diageo World Class U.S. Bartender of the Year competition in 2012 and whose résumé includes New Orleans' Commander's Palace and Cure as well as Portland's Teardrop Lounge. Gomez opened Palomar in 2018 in Southeast Portland, where it quickly drew acclaim for its '60s-Havana atmosphere and a daiquiri-focused program rooted in Cuban and New Orleans cocktail traditions; in March 2025 it relocated to 1422 NW 23rd Avenue. The Oregonian and Eater Portland both named it Bar of the Year in 2018, and it has been a Tales of the Cocktail Spirited Awards finalist for Best U.S. Restaurant Bar in 2023 and 2024.
The bar is built around blended daiquiris and house infusions such as its house pineapple gin, and its current menu carries a dedicated "NO PROOF" section of signature non-alcoholic drinks — including a Pathfinder daiquiri and zero-proof takes on the Mojito, Moscow Mule, Spritz and Piña Colada — alongside non-alcoholic beer and wine. The relocated venue welcomes minors and runs a daily happy hour.
