Paper Doll, on 1st Avenue North in downtown Birmingham, works on the dealer's-choice model: rather than handing over a card, the bartenders ask what you feel like and build to it. Bham Now's summary of the room is that it is known for creating the perfect drink when you tell them whatever you are in the mood for.
That model normally gets a sceptical reading in this directory. "We'll make you something without alcohol" is the standard deflection from bars with no programme at all, and it puts the burden of negotiation on the person who is already the odd one out. Paper Doll clears the bar because the improvisation is the house style for every customer, not a fallback reserved for non-drinkers — and because there is a specific documented alcohol-free build, the Cream Cycle, which Birmingham's own paper named in its January 2026 round-up of the city's non-alcoholic drinking.
The distinction is worth stating plainly, since it recurs across this directory: a bar that improvises for everyone is including you; a bar that improvises only for you is accommodating you. The first is a good sign, the second usually is not.
The grade of three reflects scale honestly. One named non-alcoholic drink, no printed zero-proof section, no non-alcoholic spirits programme documented. What a reader gets is a good cocktail bar where describing what you like will produce something made with care.
Hours run 5pm to 10pm Tuesday through Thursday and 5pm to 1am on Friday and Saturday, closed Sunday and Monday. It sits in the middle of the downtown cluster, a minute from Neon Moon and Pink Lantern, which makes it easy to fold into a longer evening rather than treating as a destination on its own.
