Post Haste

Post Haste opened in June 2023 at 2519 Frankford Avenue in East Kensington, led by beverage director Fred Beebe and director of operations Gabe Guerrero, and its organising idea is hyper-regional sourcing: every spirit, beer, wine, herb and mixer comes from east of the Mississippi River. That constraint is the whole personality of the bar, and it is a demanding one — it rules out agave from Mexico, most citrus, and the great majority of the imported bottles a cocktail list normally leans on.

What makes the bar relevant here is that the same discipline extends to a dedicated zero-proof section headed "Free Spirit", built with the same intent as the full-proof list rather than as a concession bolted on at the end. A bar working under a sourcing constraint has already had to become good at building flavour from what is available rather than from what is conventional, and that skill transfers directly to making a drink without alcohol — both problems are the same problem, which is how to construct depth when the obvious ingredient is off the table.

The Tea El See is the clearest expression of it: Charleston black tea with condensed oat milk, allspice and cardamom. Tea supplies tannin, which is the astringency that gives a drink structure and stops it reading as sweet — the same compound that makes red wine feel dry. Condensed oat milk brings body and sweetness in one ingredient, and allspice and cardamom provide the warm aromatic top notes that would otherwise come from a barrel-aged spirit. It is a drink built the way a bartender builds, from tannin, fat, sugar and aromatics, rather than assembled from juices.

The farm-to-glass framing means the list moves with what is growing, so the specific pours rotate. Open Wednesday to Saturday from five in the evening until midnight, and Sunday until ten; closed Monday and Tuesday.
