Roosevelt's sits on Cherry Street, the East 15th Street restaurant strip, a few doors from Nola's — which makes that block the most concentrated stretch of good alcohol-free drinking in Tulsa outside downtown.

The Red Keep is the drink, and its specification is a small lesson in how to build a mocktail that adults want. Blood orange and lemon give it citrus and colour. Jalapeño and ginger beer give it two different kinds of heat — the capsaicin burn of the chilli and the volatile, aromatic heat of the ginger — layered rather than duplicated. There is no added sweetener in the description at all beyond what the ginger beer carries. The result is savoury, hot and dry, and it works alongside a plate of food, which most mocktails do not.

That matters because the failure mode of this category is sugar. A drink built to be sipped over an hour with dinner has to be low enough in sweetness not to fatigue the palate, and heat is one of the few tools available to replace the bite that alcohol supplies. Roosevelt's uses two.

The hours are the second argument.
