Spectre occupies a second-floor space on Tanjong Pagar Road, in the middle of one of Singapore's densest bar strips, and it has taken a position that sets it apart from its neighbours. The concept is mental wellness, and the room is dressed as a vintage apothecary — dark timber, small bottles, a deliberately hushed scale. The premise is that the drinks should be composed with an eye to what the ingredients do, not simply how they taste, and the menu is written accordingly.
The structure of that menu is what earns the bar its place here. Rather than printing a short mocktail list at the back, Spectre divides its drinks into four flavour families — Umami, Spices, Citrus and Herbal — and every single one of those segments includes a no- or low-alcohol option alongside the spirited builds. The practical effect is that a guest who is not drinking chooses by flavour, the same way everyone else at the table does, instead of picking from a separate and much shorter page. Very few bars anywhere organise their list this way, and it is a far stronger signal of intent than the number of zero-proof drinks alone would suggest.
The alcohol-free drinks themselves reflect the wellness framing. The bar has run a dedicated alcohol-free list including the Bonseki, and the team is comfortable building off-menu, with reported zero-proof serves drawing on chamomile, butterfly pea and apple cider vinegar chosen for digestion and relaxation as much as for flavour. Food is limited to nibbles, so this is a drinking room rather than a dinner destination. It opens at 5pm Monday to Saturday and closes at 11pm, and it is shut on Sundays — worth checking before making the trip, since much of the surrounding strip trades later.
