Zén occupies a restored shophouse on Bukit Pasoh Road and is the Singapore sibling of Frantzén in Stockholm. It carries three MICHELIN stars, which places it at the very top of the city's dining hierarchy, and the format is a long tasting menu served across multiple floors of the house. For a guest who is not drinking, the relevant fact is that the restaurant treats the non-alcoholic route as a full parallel programme rather than a concession.
The pairing runs at roughly S$250 per person. That price is deliberate and worth understanding: it sits alongside the wine flight rather than beneath it, which is the clearest possible statement that the zero-proof drinks are not a cheaper fallback. The programme is also rewritten whenever the kitchen alters its dishes, so what arrives is matched to the food on the night rather than assembled from a standing list. That is a significant amount of ongoing work, and very few restaurants at any level commit to it.
The drinks themselves are built with fermentation and extraction rather than simple juicing. Documented serves include a sparkling aperitif made from heirloom tomatoes and red plums; a Peach with Pepper, in which aged peaches are juiced and fermented before being combined with oxalis stems and pepper; and a white wine alternative of fermented quince, apple, pear and lemon, finished with toasted pecan and walnut water to give it the weight and nuttiness that a wine would otherwise supply. These are savoury, structured drinks designed to cut and complement across a long menu, not sweet ones — the fermentation supplies the acidity and length that would otherwise come from wine, and the nut waters supply the weight.
The restaurant has also moved into bottling its non-alcoholic work in white, red and orange styles, which suggests the programme is treated as intellectual property rather than as a service obligation. For a non-drinking guest the practical implication is simple: this is one of the few three-star restaurants anywhere where declining the wine flight does not mean accepting a lesser version of the evening. Booking is essential and should be made well in advance, with the pairing requested at the time of reservation so the kitchen can plan the sequence.
