Baia is a 5,000-square-foot rooftop dining lounge and bar perched on Level 4 of Esplanade Mall, opened in September 2024 by Singapore's ilLido Group under founder Beppe De Vito. Inspired by the ancient Italian resort town of Baiae, the space pairs a warm maroon-gold-green interior seating around 136 with a breezy open-air terrace that looks straight across Marina Bay and the city skyline. It runs from daytime set lunches into high-energy nights with live DJs from Wednesday through the weekend.
The cocktail program is curated by the beverage consultancy Proof & Co and split into three moods: SOL (bright aperitivo-style serves such as the Strombolian), NOX (indulgent after-dark drinks like the Eclipse) and MOSAICS (shareable quick-serve builds). Food leans Mediterranean with Japanese accents, from a caviar-and-oyster raw bar to charcoal-grilled plates, with most drinks and dishes kept accessibly priced.
The non-alcoholic offering is a real, integrated part of the list rather than an afterthought: four dedicated zero-proof cocktails priced around S$16 each. 'As Good As Corona' is built on Seedlip Grove 42 with yuzu and sage, while 'Not a Sunken City' rebuilds the signature Sunken City without booze, replacing the dry gin with a non-alcoholic spirit and adding citric and saline solution to keep the savoury tomato-relish drink in balance. As bar manager Adonis E. Reyes puts it, the team keeps 'all the flavour magic' while swapping out the alcohol, and will mix bespoke spirit-free drinks to order.
Baia has not appeared on Asia's 50 Best Bars or in the Michelin Guide as of this verification; its draw is the view, the Proof & Co program and a credible zero-proof selection rather than an awards pedigree.
