The Town Company

The Town Company is the flagship restaurant of Hotel Kansas City, the Unbound Collection by Hyatt property that occupies the old Kansas City Club building downtown — a 1922 landmark on the National Register of Historic Places, converted into a hotel and opened as a restaurant on 15 October 2020. The room was built around an open-hearth, wood-fired oven with its own art deco bar alongside, and the cooking runs through it: Clara Bow rolls proofed and baked in a cast-iron pan and served with cultured butter and a roasted carrot dip, lamb skewers combining grilled leg, braised tongue and house-made sausage with roasted aubergine purée and honey vinegar, and an angel food cheesecake with black sesame ganache and a pomegranate-poached pear. Executive chef Johnny Leach has been recognised by the James Beard Foundation in three consecutive years, named a semifinalist for Outstanding Chef in 2023 and for Best Chef: Midwest in 2025; his wife Helen Jo Leach runs pastry and was herself a 2025 semifinalist for Outstanding Pastry Chef.

The non-alcoholic drinks are treated as a named part of the bar rather than an afterthought — the restaurant calls them "no proof" options, which is a small signal that someone chose the language deliberately. The one that has drawn attention is Clear Headed, built on Ritual's rum alternative with Earl Grey tea and smoked vanilla: tannic and smoky rather than fruity, and designed to sit alongside the wood-fired cooking rather than to imitate a cocktail. KCUR singled it out when mapping where to drink well without alcohol in Kansas City. Two practical caveats. The restaurant does not maintain its own web presence any more — its address now redirects into the Hyatt booking system, which does not publish the drinks list — so the current zero-proof options are best confirmed on arrival. And note that published sources disagree about the building's street address, since the hotel occupies a corner with entrances on both 13th Street and Baltimore Avenue.
