Art Haus is a downtown Boise cocktail bar whose two named alcohol-free drinks are both built around aromatics rather than sugar — a Chamomile Cordial, and Golden Hour, which layers pomegranate and grapefruit with orange blossom water and cardamom over soda. Orange blossom water and cardamom are the giveaway: they are perfume-adjacent ingredients used in small measures for scent, and reaching for them signals a bar solving the real problem with zero-proof drinks, which is that removing alcohol removes aroma as much as it removes warmth. Barbacoa Grill, near Parkcenter Boulevard on the river side of Boise, pairs a deliberately theatrical dining room with a dedicated mocktail menu it calls Zero Regrets.
