Boulon Brasserie & Bakery sits on Water Street, the master-planned district that has reshaped downtown Tampa's waterfront over the past few years. It works as a French brasserie in the full-day sense: pastries and coffee from 7am, lunch, dinner, and a bar that runs to 1am on Friday and Saturday. That span is unusual and useful — very few rooms in the city serve a proper made drink at eight in the morning and again at midnight.
The alcohol-free cocktails are built on Ritual Zero Proof spirits and constructed with the same number of moving parts as the full-strength list, which is the point. The French Caribbean Spritz layers Ritual's gin alternative with house grenadine, passion fruit, cranberry, lemon, blood orange and ginger beer — seven components, which is more than most bars put into a drink with alcohol in it. The Next Level Root Beer takes Ritual's rum alternative into a root-beer syrup with grapefruit, lemon and ginger beer, and lands somewhere between a soda and a long drink without being childish about it.
Water Street is corporate territory — hotels, offices, the arena — which shapes who uses the room and why the alcohol-free list matters. A business dinner, a pre-game meal, an early breakfast meeting: these are all situations where somebody is not drinking for reasons that have nothing to do with recovery, and where being handed a soda is a small professional indignity. A printed spritz solves that.
Practical notes: it opens at 7am daily and runs late at weekends, the bakery counter operates separately from the restaurant, and the district gets busy around events at Amalie Arena. Full brasserie bar and wine list — the Ritual builds are a real section of the menu rather than the identity of the place.
