Fitz on 4th trades on South 4th Street in Queen Village, and it is entirely vegan — not a restaurant with a vegan section, but a kitchen and bar with no animal products anywhere on the premises. That constraint is the most interesting thing about its drinks.
The Super Fruit Martini is built on a zero-proof gin with a super-fruit blend, a cranberry reduction and lemon, and it is finished with what the menu calls a silky foam. In a conventional bar that foam would be egg white or, increasingly, a commercial foaming agent derived from it; a shaken sour gets its dense pale head that way, and the texture is half of why the drink works. A vegan bar cannot do that, so the foam has to come from aquafaba — the viscous liquid from cooked chickpeas, which whips almost identically — or from a plant protein. Either way it is a deliberate technical choice, and it is the sort of detail that separates a bar building drinks from one pouring them.
The cranberry reduction is the other tell. Reducing juice concentrates its acid and sugar together and thickens the body, which gives the drink weight in the mouth. Weight is the quality that non-alcoholic drinks most often lack, because ethanol itself contributes viscosity that water cannot replace.
Lia's Lavender Lemonade is the simpler counterpart, floral and sharp, and works as the long drink of the pair.
There is a broader point about why a vegan restaurant tends to be a good bet for a non-drinker. Both disciplines involve building a familiar experience while a default ingredient is off the table, and a kitchen that has spent years working out how to make food satisfying without butter, cream or stock has already internalised the habit of thinking in terms of fat, acid, salt and texture rather than reaching for the obvious. That habit transfers directly to the bar.
Closed Mondays; open from four in the afternoon midweek and from noon Friday through Sunday, closing at ten throughout.
