Greenhouse

Greenhouse runs inside Elevation Coffee Roasters on North Franklin Street in Tampa Heights, and is billed as the city's first booze-free music venue. It launched in July 2025 as a hi-fi listening bar — a format borrowed from 1950s Japanese jazz kissa, where the sound system is the reason people come and conversation is kept low enough not to compete with it. Co-founder Nolan Hammer has described the idea as growing from a shared love of music through high-fidelity audio and the nostalgia of those Japanese rooms.

The format solves something specific. Most alcohol-free venues have to answer the question of what people are supposed to do instead of drinking, and most answer it weakly — board games, a quiz, nothing. A listening bar answers it structurally: the activity is the record, played through an analogue system on curated vinyl nights, generally Friday evenings, running new and old funk and soul. Nobody needs a drink in hand to justify being there, which is the whole difficulty of sober socialising resolved by the room's design rather than by willpower.

The drinks are built rather than poured. Craft zero-proof cocktails run on Ritual Zero Proof, Seedlip and Curious Elixirs, with non-alcoholic beer and wine alongside, and the plan has been a set of staple mocktails each week supplemented by specials and seasonal builds. By day the same address is a working coffee roaster, so the space earns its rent across the whole week rather than on Friday nights alone.

Practical notes: check the schedule before travelling, because the listening-bar sessions are event-based rather than continuous, and the daytime operation is a coffee shop rather than a bar. Everything served in the Greenhouse programme is alcohol-free — this is one of the few venues in the region where that is true of the entire offering rather than a section of it.
