Law Bird opened on 7 November 2019 in a converted pet supply shop at 740 South High Street, at the southern end of the Brewery District. It is owned and run by Annie Williams Pierce and Luke Pierce, a married pair the owners describe as "two restaurant industry lifers," with résumés that run through Curio, Veritas, The Sycamore, Land-Grant Brewing, Brothers Drake and Watershed. Williams Pierce won the United States Bartenders Guild's Most Imaginative Bartender title in London in 2017 — the first woman to do so.
