Mauro Colagreco at Raffles London at The OWO is the signature restaurant of Argentine-Italian chef Mauro Colagreco, whose Mirazur on the French Riviera holds three Michelin stars and was named the World's Best Restaurant in 2019. Opened in late 2023 inside the meticulously restored Old War Office (The OWO) on Whitehall — a landmark Edwardian building turned Raffles hotel — the restaurant won its first Michelin star in the 2025 guide. Under Vincenzo Arnese, Raffles London's director of wine, the restaurant runs a dedicated multi-course Temperance Pairing — roughly £80 alongside the five-course menu and £105 alongside the seven-course menu — of sparkling teas, water kefirs and bespoke mocktails, each conceived to echo a specific dish rather than to fill a glass. Arnese has said he approaches the soft serves 'as if they are a dish' themselves, developing them directly with the kitchen chefs, and reports that about 15 percent of guests now choose the soft-drink pairing, a share that keeps rising.

The serves are drawn from the English countryside and the menu's produce. The Smokey Carrot leans on carrot and sea buckthorn; the English Garden No-Tini is built from Seedlip Garden 108, the non-alcoholic aperitif Everleaf Marine and celeriac leaf oil; and the 'Dandy Smoke', a zero-alcohol homage to Islay single malt, uses wood-smoked Lapsang tea leaves, sea buckthorn and carrot trimmings, poured to accompany sea bass sashimi. A Quince Pet Nat and other house sparkling teas and kefirs round out a list that treats abstaining guests to the same craft and progression as the cellar.

This is a formal fine-dining room inside a five-star hotel rather than a bar, so the non-alcoholic experience comes as part of a tasting menu with reservations essential; there is a smart dress code and a minimum age of 12. For anyone seeking a marquee, occasion-level meal in central London without alcohol, it is one of the city's most credible destinations — a Michelin-starred kitchen where the zero-proof pairing is engineered, course by course, to stand shoulder to shoulder with the wine.
