Co-owners Andrew and Angie Fuller met working at The Copper Onion and opened Oquirrh — named for the mountain range west of the city, two blocks east of the Eccles Theater — as their long-planned dream restaurant in 2019. The kitchen is built around seasonal, locally sourced ingredients and a frequently changing, precision-driven New American menu.
The Salt Lake Tribune highlighted Oquirrh in its October 2021 "Mocktails find their moment" feature, photographing co-owner Angelena Fuller mixing a no-alcohol cocktail. Rather than a fixed list of named zero-proof drinks, the program works by stocking non-alcoholic spirits and ingredients so the bar can build a faithful alcohol-free version of nearly any cocktail to order.
